Homemade Stuffed Turkey with Dried Fruit

Instructions:

For the stuffing.

Take a large saucepan and start sautéing in the olive oil, the chopped onion and the minced meat over high heat, for a few minutes until golden brown. Quench with wine or brandy.

Then add the rice, chestnuts, raisins, pine nuts, walnuts, orange zest, apples and spices and let them simmer (on low heat) and mash them all together.

When we see that the stuffing is ready, let it cool and start stuffing the turkey.

For the Turkey:
Our turkey must be without its neck and the tips of its wings.
The proper preparation of the turkey is based on the removal of fat from its belly and in particular on its opening.
So try to remove as much fat as you can by hand.

Start smearing the turkey on the outside and inside with a mixture of our butter, spices and orange zest to get a first taste and cook your turkey without drying out.

 

Next, fill the belly with the stuffing we prepared with a spoon to cook with the turkey.

Tie the turkey properly, so that during cooking it does not open and lose its juices.
Place it in a pan and start baking it for about 45 ‘until it turns brown, at 220 μεC to 210 ºC depending on the oven.

After 45 ‘, lower the heat to 150 ºC and cover the turkey with foil so that it does not grab.
Continue baking for about 3 hours. Just before removing it, remove the foil to make the skin color and taste.

When it is ready, leave it out of the oven for a while and serve! A good suggestion to accompany our turkey is rice or baked potatoes.
