Delicious Homemade Melomakarona !!!

For a start, beat the oil and sugar well, until they are as homogeneous as possible. You will understand that the mixture is ready as soon as you see it become like a porridge.
Add the orange juice, baking soda, brandy and zest.
Then add the flour and start kneading, until all the flour is absorbed. I would suggest you use your hands for a better result instead of a mixer. In a circular motion, mix very well until it is like a soft dough to your touch.
Start shaping your melomakarona.
Important note: make sure the size of the melomakarona is about half or 1/3 of what you estimate you want. Otherwise they will come out huge because they swell.
It’s time to bake! In a preheated oven at 200 in the air for 35 minutes!
The syrup is in order.
Important note: That we must start the syrup 3-4 hours before we start making the melomakarona so that it has cooled down when our melomakarona come out of the oven.
Put all the ingredients in a saucepan and wait until they boil. It would be good to put the honey at the end so that it does not burn too much. Once it boils, remove the pot from the heat
Pour the syrup over the melomakarona and add the chopped walnut or pistachio and cinnamon if you want!
An important tip. In order not to break the melomakarona, first put them on the plate and then syrup them!

- 2 kg baking soda
- 1 kg orange zest
- 2 kg of flour
For the syrup:
- 1 cup. Cretan honey
- 1 cup. Brown sugar
- 1 1/2 cups. water
- 1 cinnamon stick
- 1 orange peel
