Flour is the main ingredient in bread and many other foods which is a staple food in many countries worldwide and occupies a leading position in the Greek diet.
In recent years, organic locust bean flour has become very popular worldwide, especially in Greece, because carob flour is a product of high nutritional value.
We also know it as the bread of Agios Ioannis, which originates from the evergreen carob tree (Ceratonia siliqua) that grows in warm and dry climates. The green pericarp of the tree contains green pulp that is eaten. However, when they dry, they turn dark brown while the pulp is baked and ground into flour / powder used in baking in the oven and in the preparation of pastries. Because carob does not contain fat, carob flour makes the texture of baked sweets a little more spicy.
Carob seed flour can also be used to make gluten-free products, and if you are on a diet, it is ideal because it contains little fat, and because it does not contain theobromine, it is considered more suitable than cocoa for those suffering from migraines.
Carob flour contains much more sugar, but less fat than cocoa powder. For those who do not want the stimulant caffeine and theobromine, an alkaloid in chocolate, their carob flour is valuable. It does not contain caffeine
Carob flour has vitamin A and in addition to the aforementioned metals there are copper, manganese, potassium, magnesium, zinc and selenium (Murray et al., 2006) Carob fights diarrhea in young children especially if combined with a shaved apple that we leave a few minutes to become dark. Carob tannins are not water soluble and do not combine with proteins, nor do they make them unavailable. These tannins have an astringent effect on the digestive system, combine and inactivate toxins while preventing the growth of bacteria.
Mix 20 gr. carob flour with a little boiled apple or a little mashed sweet potato. Also, in gastroesophageal reflux, carob flour with its fibers and sugars makes food more sticky and relieves the reduction of acid reflux in the esophagus.
