Flour is the main ingredient in bread and many other foods which is a staple food in many countries worldwide and occupies a leading position in the Greek diet.
Organic amaranth flour has become very popular worldwide in recent years, but in Greece it is not so widespread, but this must change little by little because amaranth flour is a product of high nutritional value.
Amaranth flour has no gluten and has a low glycemic index. It is very tasty with which we can make pastries, such as bread, cakes, pies, pancakes, breadsticks, cookies and pastries. Because it does not swell easily, usually in the preparation of bread, a mixture with other flour is used.
To make bread, we have to mix it with other flours with a ratio of 1 part amaranth to 4 parts other flour.
It is three times higher in fiber and five times higher in iron than wheat flour. It also has twice the calcium content of milk as well as phosphorus, potassium, vitamins A and C. It contains tocotrienols (a form of vitamin E and linoleic acid.
