Description
Nutmeg is a spice used almost always in our Greek Mediterranean diet. Nutmeg can help our health in a variety of ways, mainly because of its nutritional content of vitamins, minerals and organic compounds related to essential oils. These beneficial ingredients include dietary fiber, manganese, thiamine, vitamin B6, folate, magnesium and copper.
The use of whole nutmeg in cooking is extensive. Used (usually grated) to season various common and gourmet foods
Its taste is spicy, but when fresh it is much stronger.
We use it as a medicine for peptic ulcer, nausea, vomiting, diarrhea, especially if it is due to food poisoning.
Where do we use it?
• It is the spice of sauces with milk or cream (eg bechamel). Also in lemon sauces, especially if tied with flour or cornflour.
• But it’s not just white sauces that are seasoned with nutmeg. Many chefs also use it in tomato sauces.
• We can only make bolognese with nutmeg and it is also suitable for various minced meat products, mainly burgers and minced meat rolls. It is also perfect for gouharlakia.
• It is common in potato puree but also in preparations containing it, such as gnocchi, English shepherd’s pie, potato pies, potato chips etc.
• Perfectly spices the spinach whether it is steamed or sauteed or cooked as spinach. Even in spinach cakes we can use it.
• It is generally suitable for cooking with sweet greens, e.g. grass soups, yoghurts, cigarettes, etc., on which he gives his earthy blossom.
• Also with cauliflower, pumpkin, carrot and leeks, grilled, cooked, in puree or soup.
• In pies such as chicken pie, jasmine pie, minced pie.
• In chicken or pork with lemon or orange sauces.
• Oriental pilafs with dried apricots, raisins, dates and nuts (almonds, pistachios etc.).
• In breads and pastries.
Sweet instead of cinnamon
In confectionery, nutmeg can be used instead of (or with) cinnamon, e.g. for sprinkling creams. Also, in apple, banana, pumpkin preparations (such as a sweet pumpkin pie), in jams but also in sauces and chocolate mousse.
