Η ερυθριτόλη δεν επιδρά στα επίπεδα σακχάρου στο αίμα ή τα επίπεδα ινσουλίνης και δεν έχει καμία επίδραση σε βιοδείκτες όπως η χοληστερόλη ή τα τριγλυκερίδια.
